I’m think I’m going to try water fowl next year
Duck or Goose. Hmm…
I suppose they shouldn’t be too different? Maybe oiler? Anyone have either?

If I ever have the option of trying swan, I’m jumping on that chance
Swans are protected up here, and I don’t think anyone’s ever thought of eating them up here, but I’m all for pretending I’m a 16th century French royal gorging on some swan

Duck is amazing. My aunt used to make it with dressing. So good.

I like duck with a cranberry and mandarin orange glaze. It’s pretty easy to make, and the tartness really complements the duck so well.
(And now I want duck…
)
